GC applications for fatty acids are run on either an FFAP phase or on a low polarity phase. Why is this?

ZEBRON GC GC FOODBEV

Short chain fatty acids can be separated on a Zebron ZB-FFAP column, which will provide a unique selectivity and good peak shape.

An alternate approach uses transesterification of fatty acids to form fatty acid methyl esters (FAME's), which can then be analyzed on a low polarity phase. This can be advantageous if the fatty acids are larger as methyl esters have lower boiling points than the free acids.
